Vegetables can definitely be tricky to get into your diet, especially if you aren’t a fan. However, as you explore new recipes and ways of cooking, you shouldn’t have a problem finding delicious ways to get the dose of nutrition and flavor that veggies add onto your plate. One of the meals that people find hardest to get a vegetable serving (or two) into is breakfast, and since it’s at the beginning of the day, you can only imagine how great it would be to start your day with a kick. Zucchini Veggies For Breakfast
Zucchinis are an excellent vegetable to take advantage of. They’re easy, don’t pack a lot of punch and as a result, can quickly be added to about any breakfast meal that you currently enjoy. You can dice some zucchini into your scrambled eggs, or onto your over easy eggs. You can add them into a quiche or omelette.
Use Your Leftovers
You guys will love this idea! Leftover veggies can instantly be added into your eggs as well to ensure that you’re starting your day off nutritionally. If you have a mixture of vegetables left over from the night before, make a frittata. Ideally, egg with peppers, onions, spinach, tomato, asparagus and a sprinkle of cheese (although not Paleo since it’s dairy) will wow your taste buds.
Smoothies may not be your favorite at first thought, but they don’t taste like you’re drinking brocolli. So, get that idea out of your mind because they actually taste incredible and with dark leafy greens, you could start your day with a healthy dose of folate, iron, vitamins A, C and K, as well as many other things. Blending your vegetables with some fruits is also quick and easy for those of you who like to press the snooze button.
Again with the zucchini! You’ll appreciate the added dose of vitamin A and C, as well as manganese, fiber, antioxidants and potassium. You can make zucchini muffins, pancakes or waffles, and even have some maple syrup if you consider it to be Paleo (it is natural), instead of making pancakes with bananas and almond button and some eggs – or in other words, sans the veggies.
