Paleo Slow Cooker Balsamic Chicken Recipe

Some of you might have asked, “Why slow-cook meat if you can grill/oven/fry it?”. The thing is, slow-cooking has its advantages. For one, it allows better distribution of flavors in the meat. Also, the lower temperature decreases the chance of burnbing the meat which makes the meat stick to the bottom of a pan and burn easily in an oven.

Ingredients
Instructions
  1. Combine basil, salt, pepper, onion powder and sprinkle over the chicken
  2. Add coconut oil and minced garlic, onions to the bottom of the crock pot.
  3. Place chicken on the top
  4. Pour balsamic vinegar over the chicken and add rosemary.
  5. Cover and cook on high for 4 hours.
  6. Enjoy!

  1. Is the coconut oil for flavor only or to help keep the food from sticking to the slow cooker? I use liners in mine so unless its for flavor I was thinking of using half as much oil. Is there a better brand of oil to use (its a new ingredient but have read lots of positives about it).
