Paleo Scrambled Eggs Recipe

Second, it is lactose-free, meaning its sugar is easier to digest. And thiird, the medium-chain fatty acids in the coconut milk are more quickly metabolized by the liver than those in cow milk.

- 4 Eggs
- ¼ cup of coconut milk
- Salt and Pepper to taste
- anything else you want to toss in – chives, dill, parsley
- Beat 4 eggs in a mixing bowl
- Add coconut milk into the mixture
- Turn heat to medium-low and cook until the eggs are fluffy and firm.
