Paleo Roasted Broccoli Salad Recipe
When we were younger (like 15 to 20 years ago), we wouldn’t even touch the broccolis on the table. The cruciferous vegetables with pungent flavor and ridiculous texture were like Kryptonites to us little Supermen. They made us weary, stressed, and running for our lives; not to mention they are green.
Fast forward to the present time. We have learned to love broccoli. It is loaded with many vitamins and minerals including vitamin C, high dietary fibers, carotenoids, and anti-cancer minerals.
For those crying that a broccoli salad is not Paleo, no problemo. Here’s the Paleo Roasted Broccoli Salad Recipe.
- Preheat oven to 375
- In a bowl add tomatoes, broccoli, garlic, red onion, and coconut oil. Toss until coated evenly.
- On a baking sheet spread evenly bake until begins to brown. 20-25 minutes.
- Once roasted toss back into bowl and toss in green onions, balsamic vinegar and oregano.
