Paleo Potato Apple Casserole Recipe
With the proliferation of deep-fried French fries, salt and cheese-laden baked potatoes, and high-carb mash potatoes, potato’s reputation is not very good these days. Along with its fast food compadres, it has been equated to expanding waistlines and gaining pounds.
But the truth is, the world’s most famous vegetable can also be healthy and nutritious if is being prepared the right way (that is, without getting fried in a vat of oil or drizzled with loads of cheese and cream). This Paleo Potato Apple Casserole Recipe is one delicious example.
- Preheat oven to 375 degrees
- Peel potatoes and apples then remove the cores from the apples
- Cut the potatoes and apples into slices and mix with coconut oil, thyme,cinnamon, nutmeg and maple syrup
- Place in a baking sheet and Bake for 45-60 until tender
