PALEO PARSNIP CASSEROLE RECIPE
 
Ingredients
  • 6 slices of thick, cut bacon
  • 1 tablespoon coconut oil
  • 2 cups shredded parsnips
  • 4 eggs
  • Sea salt (optional) and freshly ground pepper, to taste
Instructions
  1. In a large bowl, beat the eggs thoroughly and combine with shredded parsnips
  2. Pour mixture into a slow cooker and cook on low for about 8 hours or overnight.
  3. Cook your bacon in a pan.
  4. Place bacon as topping to parsnip mixture.
  5. Enjoy!
