Paleo Mushroom, Leek, and Egg Recipe

You’ve read it from like three dozens of fitness websites and wellness campaigns. Breakfast is the most important meal of the day (and no, it’s not the post-hangover meal). But that does not mean you have the right to down any oily, sugary, fatty food in the morning, so you can put down that donut now (also, it’s not Paleo). What you need is a protein-rich, mineral-filled, vitamin fortified option.

Yes we know, very few breakfasts are like that these days. But luckily, we have this Paleo Mushroom, Leek, and Egg Recipe. Have a great morning!

PALEO MUSHROOM, LEEK, AND EGG RECIPE

GREAT BREAKFAST: PALEO MUSHROOM, LEEK, AND EGG RECIPE
 
Ingredients
  • 8 organic eggs
  • ½ lb ground chicken
  • 2 leeks chopped
  • ½ cup mushrooms
  • 1 medium zucchini grated and diced
  • salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line muffin tin.
  3. In a medium bowl whisk eggs.
  4. Add meat, leeks, mushrooms, and zucchini.
  5. Pour mixture in muffin liner
  6. Bake for 18-20 minutes
