  1. In a large skillet, heat oil over medium.
  2. Add parsnips, butternut squash, and onion.
  3. Cook until beginning to brown, 4-6 minutes.
  4. Add broth, pure maple syrup, and vinegar; season with salt and pepper.
  5. Bring to a boil.
  6. Cook over medium for 20 minutes until there is only a small amount of liquid remaining.
