PALEO CHORIZO STUFFED PEPPERS RECIPE
 
Place your slow cooker on low. Cut the tops off your peppers and remove seeds. In food processor place carrots, celery, cauliflower, garlic, and jalapeno until finely chopped. In a large bowl, combine food processor mixture with chorizo, tomato paste, oregano, tarragon, worcestershire sauce and salt and pepper to taste. Pour a cup of tomato sauce into the bottom of the crock-pot. Stuff your pepper with mixture and place upright in the crock-pot. Cover and cook on low for 8-10 hours.
