Paleo Chopped Salad Recipe
Red cabbage might be one of the most odd-looking, weird tasting vegetables out there. But hidden within this purple ball of leaves are flavonoids, powerful compounds that fight off the risks of cancer, (also, it gives the cabbage its purple color). Not to mention, it is rich in vitamin C which strengthens the immune system and protect the cells from damage.
In this Paleo Chopped Salad Recipe, we throw in other vegetables for added nutritional boost.
- Chop lettuce and cabbage into bite sized pieces
- Chop cucumber and tomatoes into small pieces
- In a large bowl whisk together balsamic vinegar, olive oil, garlic, salt and pepper to taste.
- Add bacon, onion, cucumbers, tomatoes and drizzle with dressing.
