 Paleo Chicken Wraps Recipe

 Wraps are supposed to be healthier versions of our ever-loved sandwiches (take it from the Greeks and the Turks when it comes to healthy eating). But unfortunately, wraps these days are hodgepodges of very few vegetables, a lot of bacon, cheese, mayonnaise, ranch dressings, and high-carb wraps that makes the Big Mac a better dietary option.

Your fix? Make them at home so you could have more veggies and healthier meat, and use lettuce as wrappers for a healthier kick like in this Paleo Chicken Wraps Recipe.

PALEO CHICKEN WRAPS RECIPE
 
Ingredients
  • 1 chicken breast, cooked and cubed
  • 1 avocado, seeded
  • 1 green onion, diced
  • 1 clove of garlic, minced
  • 2 tomatoes, chopped
  • 1 poblano pepper, chopped
  • ½ onion, chopped
  • Juice from 1 lime
  • ¼ cup cilantro, chopped
  • 1 head butter lettuce
  • 1 carrot, julienne
  • coconut oil

Instructions
  1. Preheat skillet on medium with coconut oil
  2. Chop onion and the poblano pepper and add to skillet
  3. Add cubed chicken breast and cook until tender
  4. Remove from skillet to a mixing bowl
  5. Chop tomatoes and julienne the carrot
  6. Mash avocado until it has a smooth texture
  7. Add avocado, onion, tomatoes, green onion, garlic and lime to mixing bowl and mix well
  8. Top with julienne carrots
  9. Scoop out mixture on to each lettuce leaf and wrap it up
  10. Serve and Enjoy!
