PALEO CHICKEN SALAD RECIPE
 
Ingredients
  • 1 lb Cooked shredded organic chicken
  • 6 large tomatoes
  • ⅔ cup diced celery
  • 3 Tbsp capers, chopped
  • ¼ cup fresh lemon juice
  • 1 Tbsp olive oil
  • Salt and Pepper to taste
Instructions
  1. In a small bowl, mix shredded chicken, capers, olive oil, lemon juice, and celery.
  2. Hollow out each tomato and cut into ¼ slices but leave the bottom connected
  3. Spoon in the chicken and salt and pepper to taste
