Sweet and Healthy Paleo Cherry Chocolate Haystacks Recipe
  1. In a microwave safe container mix coconut oil and chocolate together.
  2. Microwave on low until both ingredients melt. Mix well.
  3. Add pecan, shredded coconut, almonds, dried cherries and vanilla to the chocolate mixtre.
  4. Mix together thoroughly.
  5. Scoop mixture into equal portions and place onto a baking sheet lined with parchment paper.
  6. Chill until the chocolates are firm.
  7. Serve cold and enjoy!

  1. These turned out excellent. Very easy and fast to make. I used cranberries and Enjoy Life Chocolate chips because that is what I had on hand. I have dark chocolate and cherries on order to try it according to the recipe next time. These will be a staple evening treat in our house. I’m also going to try it with a little almond butter minus the fruit too. Thank you for this great “cheat” that is not even a cheat with the Enjoy Life chocolate chips. I can’t wait to try the hummus from your website.
