Ingredients
  • 10 eggs, beaten
  • ½ yellow onion, diced
  • 1 ½ cups finely chopped broccoli
  • 1 cup diced mushrooms
  • 2 minced garlic
  • Seasoning to taste
  • 2 tablespoons coconut oil
  • ¼ teaspoon crushed red pepper
  • ½ cup chopped tomatoes
Instructions
  1. In a large skillet, heat oil. Once heated through, sauté onions until they caramelize.
  2. Stir in mushrooms and broccoli and sauté for 5 minutes longer until broccoli is soft.
  3. Add the remaining ingredients into skillet and cook until eggs are set and cooked.
