Paleo Blackberry Muffins Recipe

It has the highest level of antioxidants among all fruits, good for lowering the risk of a number of cancers. Also, it is very rich in Vitamin C and bioflavonoids which can provide good memory and healthy skin.

  1. The blackberries should be coated with 2 Tablespoons of the mixed dry ingredients and then folded into the already combined batter.

If you don’t use paper muffin cups, just grease your muffin pan and then continue with the directions.

  2. I tried substituting coconut flour and the uncooked mixture is so dry it looks like I didn’t add any liquid ingredients. I mixed the same quantities., any thoughts on how to save this batch or how to fix future batches?

    • Coconut flour is very dry as it is. Try 5 eggs, 1/2 cup coconut flour, 1 tsp baking soda. Haven’t tried it with coconut flour though but I would try that mixture.

  3. I’m thinking of trying it with sunflower flour, since my bf is also allergic to nuts! Not sure how it will turn out.. wish me luck!

      • it turned great! I put Rasberry and dark chocolate chips instead also (its what I had! ) it was very good! and they were filing for the morning! but sunflower flour does turn green when cooled and mixed with baking soda, so that made them look funny :p but they just looked that much more healthy 😉 but it was very good to the Taste! thanks so much for the recipe

  4. I just made these. I did half blackberries and half raspberries. They were really good. I think I’ll add some vanilla extract next time. But they are the perfect sweetness and e berries shine through. Thanks for this recipe! It is a keeper!
