  1. Tip: you can roast acorn squash face down in half an inch or so of water. It takes about half the time and keeps the squash from drying out!

    I did this with no breadcrumbs and no parm (no cheese makes my mouth cry, but my body happy), and diced zucchini and roma tomatoes in place of mushrooms and apples, mixed everything with a lil’ creamed coconut and topped with c’nut flakes… dude, this recipe changed my entire day. I am currently SO FULL because I could NOT STOP EATING. so effing tasty.

    I have made this twice now and love it. This last time I added pecans. Next time I’ll try zucchini and tomatoes without the apples.
