Paleo Pork and Parsnips
Here in Paleoaholic, we love ourselves some parsnips (it is very apparent). And why not? This superfood is packed with dietary fiber (6 grams for every cup), which lowers the risks of diabetes and high blood cholesterol. Also, it is rich in folate which helps fight cancer. The potassium and vitamin C contribute to a better overall health.

- Preheat your oven to 450o F.
- Assemble slices of sweet potato, parsnips and ginger with coconut oil and evenly spread on a large rimmed baking tray. Stir together maple syrup and cayenne and season all over pork. Add to tray.
- Flavor pork and vegetables with salt and put into oven. With an instant-read thermometer placed in the center of the pork, roast pork until temperature reaches 145 o F, which is about 20-22 minutes. Wait for another 10 minutes before serving.
- In a serving tray, put in vegetables, drizzle with coconut oil, and season. Slice pork in evenly, thin pieces and place in the tray. Lastly, pour the remaining juices from the tray for added taste.
