Paleo Salmon Bake
Salmon does not always taste good. Once they enter fresh water, they start losing their flesh’s flavor and color. This is the reason why it is crucial and obligatory that fishing crews catch them as they start the journey upstream, leaving the ocean. Once they get to the fresh water, they will start the typical (and amazing) swimming-against-the-stream thing, the only fish that has the skill to do so.

- Preheat your oven to 450o F.
- Spread the kale and cabbage in an evenly manner in a rimmed baking sheet. Add 2 tablespoons of coconut oil in it. Add salt and pepper and put in the oven for about 6 minutes.
- Season salmon and place to the baking tray. Cook the salmon in the oven for about 10 minutes.
- Meanwhile, stir together lemon juice, dill, mustard and the remaining ¼ cup of coconut oil. Top salmon and vegetables with the dressing before serving.
